A top-tier Silver Needle Yellow tea made from the first buds (Pre-Qingming) of trees from Junshan island in Hunan. Sweet corn taste and a little smokiness and hints of raisins. 

 

Yellow teas are relatively rare and involve a 'sealed yellowing' step that softens some of the bitter and astringent notes in green tea into a smoother, sweeter tea, whilst preserving some of the character of a green tea.

    • Leaf: 2-3g per cup (~200ml)
    • Water temperature: 85C
    • Steep Time: 2 minutes (Steep 1 and 2), 3 minutes beyond
    • Infusions: 4

    There are a few tricks that will allow you to get to 85C water without a temperature-controlled kettle. One is to allow the boiling water to cool with the lid off for 3 minutes post-boil, but a quicker way is to add 1 part cold water to 5 parts of hot water.
