Premium Yellow tea from the renowned growing region of Huo Shan county, Anhui province, which is known for its exceptional Green teas. This tea is an intermediate between Green and Yellow and so has characteristics of both. Nutty, with a subtle sweetness, but also a mineral and vegetal quality like Green tea.
Yellow teas are relatively rare and involve a 'sealed yellowing' step that softens some of the bitter and astringent notes in green tea into a smoother, sweeter tea, whilst preserving some of the character of a green tea.
Huo Shan Huang Ya Yellow Tea
- Water Quality: Filtered water ideal
- Leaf: 2g per cup (~200ml)
- Water temperature: 75-80C
- Steep Time: 3 minutes
- Infusions: 3-4
There are a few tricks that will allow you to get to 80C water without a temperature-controlled kettle. One is to allow the boiling water to cool with the lid off for 5 minutes post-boil, but a quicker way is to add 1 part cold water to 4 parts of hot water.
