An aged White Peony grade. Rich, muscatel and mildly sweet, evolving into marzipan and almond notes. 

 

Ageing of white teas produces greater complexity and depth ('body') to white tea. The original delicate and floral notes are often accompanied by dark fruity, nutty and buttery notes.

 

There is a saying in China: ‘one year = tea, three years = medicine, seven years = treasure’. This particular tea has been ageing since 2010 (15+ years!)

    • Water Quality: Filtered water ideal
    • Leaf: 2-3g per cup (~200ml)
    • Water temperature: 80-85C
    • Steep Time: 3-4 minutes
    • Infusions: 3-4

    There are a few tricks that will allow you to get to 80C water without a temperature-controlled kettle. One is to allow the boiling water to cool with the lid off for 5 minutes post-boil, but a quicker way is to add 1 part cold water to 4 parts of hot water.
